peanut butter chocolate chip breakfast bread
I am one of those people who LOVE the combination of peanut butter and chocolate. I don’t know too many people who don’t but maybe that’s because they are just the people I roll with. There are just some mornings I need more of a dessert for breakfast and this does the trick. I love that we can enjoy something sweet and chocolaty in the morning and know that we are putting good things in our body too. This recipe whips up quickly and is devoured even faster than it’s made. Baked right, it has a cake-like, moist texture that is filling enough without being too heavy.
My household enjoys this yummy breakfast bread and my little man LOVES helping me mix it up. His favorite part is of course helping me put the chocolate chips in, but only because I let him sneak a few for himself. This recipe is adapted from Elana’s Pantry. - 1/2 cup creamy peanut butter
- 2 eggs
- 2 tablespoons honey
- 1 teaspoon vanilla
- 1/4 teaspoon stevia
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1/4 cup chocolate chips
Preheat your oven to 325 degrees.
Lightly grease a 8x8 pan. Set it aside
Mix all of your ingredients together well in a medium bowl. Pour your mixture into your lightly greased pan and gently spread it out in the bottom of your pan.
Bake for 12-15 minutes until it is still just a little soft in the center. This bread gets really dry really fast, so don't over bake it.
Let it cool just for a moment. ENJOY.
**I usually do half the pan with chocolate chips and the other half without because I don't like to clean up the CRAZY chocolate mess covering my kiddos faces after they are done devouring it!
