powerhouse monster cookies

These cookies are C-R-A-Z-Y good! I like most cookies but these are definitely near the top of my list of favorites. I love that they are a powerhouse when it comes to super foods with out losing any of that yummy cookie taste. I made these when a family in the church came over for dinner and their four kids, couldn’t get enough. I also took these cookies to our church anniversary celebration. I am even baking up a batch as I type this post. And I know I am going to be hard pressed to not eat 5 right when they come out of the oven. I love eating warm cookies that are soft and gooey. healthy monster cookies I love that they are a take on the monster cookie – meaning they are chalked full of nutritious ingredients but still loaded with yummy stuff. Yes, there is still lots of sugar in them but, they are a cookie after all. IMG_0439 I am so glad I came across this inspiring recipe over at monster cookies2

peanut butter chocolate chip breakfast bread

I am one of those people who LOVE the combination of peanut butter and chocolate. I don’t know too many people who don’t but maybe that’s because they are just the people I roll with. There are just some mornings I need more of a dessert for breakfast and this does the trick. I love that we can enjoy something sweet and chocolaty in the morning and know that we are putting good things in our body too. IMG_9383 This recipe whips up quickly and is devoured even faster than it’s made. Baked right, it has a cake-like, moist texture that is filling enough without being too heavy.

My household enjoys this yummy breakfast bread and my little man LOVES helping me mix it up. His favorite part is of course helping me put the chocolate chips in, but only because I let him sneak a few for himself.  IMG_9409 This recipe is adapted from Elana’s Pantry. baked donuts with chocolate buttercream frosting

One night while Ian was gone last weekend, I really wanted buttercream chocolate frosting. I wanted breakfast for dinner, and so naturally, that lead to donuts for dinner. IMG_9681 IMG_9660 As I was making these Job kept telling me thank you (which for him looks more like blowing me kisses). While they were in the oven I got a thank you. While I was putting sprinkles on his, another, and then again after I gave him his VERY own frosted donut. They were a big hit with my kiddos. It made daddy being gone a little more bearable. IMG_9684 IMG_9667 And seriously, look at Job’s face here. He can NOT wait to consume the WHOLE thing!  IMG_9688 I found this recipe and knew I wanted to make it my own. So I went to work in the kitchen. After a few tries and tweaks, I think I got it. So here you go. Enjoy.

no bake cookies for one

I really wanted a giant chocolate chip cookie, but in fear I would eat the whole pan, I decided to come up with an alternative. No-bake cookies. These have a great chocolatey flavor infused with a perfect peanut butter compliment. There is a hint of coconut flavor if you add the coconut, but it’s very subtile.  IMG_6483 I love no-bake cookies but, to be honest, I love most cookies. However, I have a history with these cookies. My high school English teacher, Patti Frisk, would make them for our birthdays. Yes, she made cookies, or something yummy, for every high school student and the class on their birthdays. She blessed many with her sweet spirit and yummy cookies.

IMG_6485 So as I thought of my high school teacher and began to miss her dearly, I began thinking up this recipe. So, for those hot days that you don’t want to turn your oven on, or missing your high school teacher, or a day you just need some yummy chocolate … here’s a great recipe to try.

almond meal chocolate chip cookies

I am a cookie addict. There, I said it. Warm chocolate chip cookies are my weakness. They are so yummy. I have to make small batches of them to keep myself from eating all 5 dozen in a day or two. This batch makes one pan full, which is perfect for those who can’t stop themselves.

These cookies have a great slightly nutty taste due to the almond flour. I love that this recipes uses both butter and coconut oil. They keep true to the buttery goodness of a chocolate chip cookie while having some added nutritional goodness from the coconut oil. The dark chocolate has just the right amount of bitterness to balance out the sweetness of the cookie. I recommend you go and bake up a batch of these as soon as you can. yellow cake with chocolate buttercream frosting

Today we are having people over and I was on the hunt for a good yellow cake with chocolate frosting. I was just in the mood for cake. And a gathering is ALWAYS more fun with cake, right? This was originally a cup cake recipe from Krissy’s Creations, but I adapted it for my purpose – a giant slice of cake. The cake itself offers a refreshingly moist texture with a nice, dense composition. The frosting is a light and fluffy consistency but does not lack a full, milk chocolatey flavor.

So if you are in the mood for a moist yellow cake with some fluffy, yet rich and sweet chocolate buttercream frosting, this cake will be sure not to disappoint!

the best chocolate chip cookies ever

I do not take the words “the best” lightly. I usually stay away from recipes that start with “the best”. But these chocolate chip cookies, they need “THE BEST” in the title for sure. These chocolate chip cookies have a perfect combination of sweet dough infused with bitter dark chocolate, with a hint of saltiness running through and through. They are ooey, gooey in the center with a nice crispy outside. These are sure to make any chocolate chip cookie lover happy. I am sure you will have a hard time stopping at just one. And if you want to take this recipe OVER THE TOP, in the best sense possible, serve a warm cookie with a scoop of vanilla ice cream atop. You will not be disappointed. 8IMG_7607 2IMG_7616 2IMG_7605
