I have been on the search for the perfect bruschetta since I had it at Macaroni Grill, on a date with my hubby. It was so yummy, and the very dish that keeps us going back over, and over, and over again. I have tried a few times recreate it, and its fallen short. It was missing something, but I just couldn’t figure out what it was.
The other night we had our church small group over for dinner. A good friend of mine brought bruschetta. It was heavenly. I asked her for the recipe and she sent it my way. Hers was a warm bruschetta, with yummy melted mozzarella on top. Very delish. What I didn’t know while eating it was that it held the secret ingredient in it. It was the missing link! I needed to taste that yummy, warm, gooey, delight to figure out what mine was missing – oil packed SUN DRIED TOMATOES! It was love at first taste. MMM MMM good.
If you like bruschetta, hey, even if you don’t, you should try this recipe. It’s so yummy. Hey, and if you’re like me, you can skip it as an appetizer and eat as your straight up dinner. You won’t be disappointed. I promise.
